Coconut Fudge Slice

This recipe is useful as a reward system for children who are fussy eaters on the intro diet, it is smooth and has the texture of chocolate as it melts in their mouth.

About 50% of fatty acids found in coconut oil is Lauric Acid which is one of the ingredients found in human breast milk that helps a baby fight off bacterial, fungal and viral invaders. When coconut oil is consumed, the body converts it to a substance called monolaurin which is antiviral, antifungal and antibacterial. Both coconut oil and potent strengths of manuka honey have shown to be beneficial in treating Candida Albicans amongst many other viruses and parasites.

Ideal for Fussy Eaters

Children who are fussy eaters that need a Mealtime Management Plan to establish successful eating of the GAPS food will need very  motivating forces to get them to eat.  The first option is to use things that they love to play with or have a strong interest in and not allowing them to have access to those things at any other time so that the reward will be motivating.  This normally works when the parents have put a lot of thought and effort into it, however for more difficult cases (and as a last resort) we use food as a reward and this recipe is a good one to use and supper easy and fast to make.  I like to use activated almond butter for this one but any nut butter or alternative can be used.  Remember to do the sensitivity test before introducing it.

Instructions
  1. Place all ingredients into the food processor and blend until all well combined and creamy
  2. line a glass pyrex dish with bleach free baking paper and pour the ingredients into the dish
  3. Place dish into the freezer for 45 minutes to an hour so that it hardens quickly and doesn't separate
  4. Remove from freezer and store in the fridge
  5. Cut small square portions as desired
