What is the difference between vanilla extract and vanilla essence? Vanilla extract is made from the real vanilla pods that are naturally occurring, whereas vanilla essence is commercially manufactured by chemicals and normally contains sugar. Our recipe contains no sugar.


2 Organic Vanilla Pods
Find a small bottle with lid to fill approximately 200ml.



Lightly bruise the vanilla pods gently and cut them in half. Place the pods into the bottle and pour 200mls of vodka into the bottle to cover. Tighten lid and shake the bottle. Place the bottle in the pantry for 4 – 6 weeks and shake every day or so whilst the vodka is transformed. A second batch can be used using the same pods with a small amount of the remaining sediment in the bottom if the above steps are repeated.




4 roasted garlic cloves
4egg yolk’s (organic – free range)
2 teaspoons of organic ground mustard seeds
2 teaspoons of apple cider vinegar
2 tablespoons lemon juice
400ml olive oil – cold pressed extra virgin
Salt and pepper


Add all ingredients into the food processor and blend until well combined. Add olive oil slowly and keep blending to reach a thick creamy consistency. Add salt and pepper to taste.

Add more lemon juice to this recipe if desired to make a salad dressing for cabbage salad.
