Christmas Chocolates

choc101You can make any shape with these little chocolate treats.  Chocolate cooking moulds are available in many stores especially at Christmas time so you should find some stars and christmas tree shapes quite easily.  If you have any trouble, jump online and have a search, they are everywhere now.

150 grams of organic pure raw cacao butter (roughly chopped)

½ cup of organic raw cacao powder

4 – 5 tablespoons of organic raw honey (buy here)

½ teaspoon of homemade vanilla extract

Pinch of Himalayan Crystal Salt

OPTIONAL: ½ teaspoon of organic peppermint flavour (Simply organic brand in our shop)

  1. Simmer some water on a low heat in a saucepan and place a glass bowl over the simmering water. Add the cacao butter to the glass bowl and melt the cacao butter completely. (CAUTION: Keep the heat at a low temperature so that the steam does not cause any water residue within the glass bowl and make sure all your utensils and materials do not have any water on them because any water contaminating the mixture will cause lumps and clumps and spoil the smooth chocolate result).
  2. Once melted, turn off the heat and add the cacao powder gradually whilst stirring continuously with a bone dry whisk until mixed well with no lumps. Add, honey and vanilla essence and continue to whisk. Add the peppermint flavour just before pouring and only if desired as this is optional.
  3. Pour  the mixture into the chocolate moulds and set in the fridge for half an hour.
  4. I usually leave it a good hour before I attempt to pop the chocolates from the moulds  Serve as an after dinner mint or chocolate christmas treats.

STORAGE: Store in the fridge. Enjoy :)

Complements to Anna Steel in making these ones pictured above.  I love it when the GAPS team follow the GAPS diet with their families too.
